sudo apt-get remove arduino-mighty-1284p

This will remove just the arduino-mighty-1284p package itself.

Uninstall arduino-mighty-1284p and its dependencies

sudo apt-get remove --auto-remove arduino-mighty-1284p

This will remove the arduino-mighty-1284p package and any other dependant packages which are no longer needed.

Purging your config/data too

If you also want to delete your local/config files for arduino-mighty-1284p then this will work.
