Uninstall just evolution-data-server-common

sudo apt-get remove evolution-data-server-common

This will remove just the evolution-data-server-common package itself.

Uninstall evolution-data-server-common and its dependencies

sudo apt-get remove --auto-remove evolution-data-server-common

This will remove the evolution-data-server-common package and any other dependant packages which are no longer needed.

Purging your config/data too

If you also want to delete your local/config files for evolution-data-server-common then this will work.

 Caution! Purged config/data can not be restored by reinstalling the package.
sudo apt-get purge evolution-data-server-common
