To uninstall fcitx-table-stroke5 just follow these instructions.

Uninstall just fcitx-table-stroke5

Flexible Input Method Framework - Stroke5 tableDebian 9.0utils0.3.7-2
sudo apt-get remove fcitx-table-stroke5

This will remove just the fcitx-table-stroke5 package itself.

Uninstall fcitx-table-stroke5 and its dependencies

sudo apt-get remove --auto-remove fcitx-table-stroke5

This will remove the fcitx-table-stroke5 package and any other dependant packages which are no longer needed.

Purging your config/data too

If you also want to delete your local/config files for fcitx-table-stroke5 then this will work.

 Caution! Purged config/data can not be restored by reinstalling the package.
sudo apt-get purge fcitx-table-stroke5

Or similarly, like this fcitx-table-stroke5

sudo apt-get purge --auto-remove fcitx-table-stroke5
