To uninstall xserver-xorg-input-evdev-dev just follow these instructions.
sudo apt-get remove xserver-xorg-input-evdev-dev
This will remove just the xserver-xorg-input-evdev-dev package itself.
sudo apt-get remove --auto-remove xserver-xorg-input-evdev-dev
This will remove the xserver-xorg-input-evdev-dev package and any other dependant packages which are no longer needed.
If you also want to delete your local/config files for xserver-xorg-input-evdev-dev then this will work.
sudo apt-get purge xserver-xorg-input-evdev-dev
Or similarly, like this xserver-xorg-input-evdev-dev
sudo apt-get purge --auto-remove xserver-xorg-input-evdev-dev
