sudo apt-get remove xserver-xorg-video-nvidia-legacy-340xx

This will remove just the xserver-xorg-video-nvidia-legacy-340xx package itself.

Uninstall xserver-xorg-video-nvidia-legacy-340xx and its dependencies

sudo apt-get remove --auto-remove xserver-xorg-video-nvidia-legacy-340xx

This will remove the xserver-xorg-video-nvidia-legacy-340xx package and any other dependant packages which are no longer needed.

Purging your config/data too
