sudo apt-get remove libnvidia-legacy-340xx-fbc1

This will remove just the libnvidia-legacy-340xx-fbc1 package itself.

Uninstall libnvidia-legacy-340xx-fbc1 and its dependencies

sudo apt-get remove --auto-remove libnvidia-legacy-340xx-fbc1

This will remove the libnvidia-legacy-340xx-fbc1 package and any other dependant packages which are no longer needed.

Purging your config/data too
